Churn slow.
Gelato runs denser and colder than ice cream — less air, less fat, more flavour. Every batch is made on the premises the Italian way, the same way it has been since 2002.

Tomorrow's flavours are churned in the evening, once the shop quietens down. What you scoop the next day was made just hours before — never sitting in a freezer for weeks.
